For the shrimp, first mix the ingredients of the yogurt sauce in a bowl and put in the refrigerator.

Prepare the fresh shrimp in such a way that you remove the shell, but leave the tail part and also the second joint.

Remove the innards by cutting open the back and then carefully pulling out the black digestive tract. Head the shrimp meat lightly with the back of a knife, then sprinkle with salt and pepper.

Sprinkle the shrimp with potato flour. To do this, it is best to put the shrimp and flour in a clean bag and shake everything gently, this way the flour will adhere evenly to the shrimp.

Stir the beaten egg and flour to make a thick batter.

Pull the shrimp pieces through the batter, then turn them in the breadcrumbs and fry them in oil at about 180°C.

Arrange the shrimp on a plate and garnish with persil and lemon slices. Serve with the previously prepared yogurt sauce.
