Shrimp Salad with Parmesan Dressing

Cut avocado in half lengthwise, remove pit and peel. Cut flesh into small cubes and mix with 1 tbsp. lime juice. Rinse tomatoes, cut in half, remove seeds and green stem from tomato halves using a tablespoon. Finely dice tomatoes.

Rinse crab tails, rub dry with kitchen roll. Mix avocado and tomato cubes with drained capers and crab tails.

Clean arugula, rinse, spin dry.

For dressing, finely grate Parmesan on cheese grater, mix with mayo, olive oil and 3 tbsp lime juice, season with salt and pepper.

Mix avocado and crab tail mix with the Parmesan dressing. Arrange arugula leaves on plates, top with shrimp salad. Cut lime into wedges, bring to table with leaf salad.
