Zueri Gschnaetzlets 4 shallots or possibly 1 small onion.

Cut the veal into small, narrow slices. Heat the butter in the frying pan and fry the meat very briefly at a high temperature. Before the meat releases juices, remove from the frying pan and keep warm.

Add minced shallots to the frying pan, allow to brown slightly. Dust with flour and extinguish with white wine, then add cream. Thicken a little, season well.

Add the meat and bring to the boil again.
