For the slender cherry tiramisu, wash and pit the cherries. Simmer together in a saucepan with the sweetener for about 5-10 minutes. Once the cherries have lost juice, drain it and set aside as well as the cherries.

Separate the egg whites from the egg yolks and mix the egg yolks with the mascarino, low-fat curd and sweetener. Beat the egg whites until stiff and then gently fold into the mascarino mixture.

Now briefly dip each biscuit in the cherry juice and line the bottom of the mold with the soaked biscuits. Spread some of the cherries on the bottom and spread with the mascarino cream. Then put another layer of biscotti and repeat this process until the mold is full. The top layer should be a layer of cream.

Chill the slender cherry tiramisu in the refrigerator for at least 2 hours and sprinkle with sifted cocoa powder before serving.
