Instructions:

For the garnish, wash apricots, remove seeds and cut into fine wedges, also wash the strawberries and cut into equal pieces. For the sauce, wash and clean the strawberries and puree with honey and orange juice. Then pass the strawberry sauce through a sieve.For the cream, mix well curd cheese with sour cream, vanilla sugar and grated lemon zest.Now separate eggs into yolks and clear. Mix the cottage cheese natural 20% with yolks, wholemeal flour and 1 pinch each of baking powder and salt. Beat the egg whites until stiff and gently fold into the mixture. Thinly coat a coated pan with oil and heat. Place the batter in small portions (about 2 tablespoons per omelet) in the pan, spread a little and bake until golden brown on both sides. Spread the cream cheese omelettes with the curd cheese cream, garnish with apricots and strawberries and serve with the strawberry sauce.
