Cook soba noodles in boiling water according to package directions until al dente. Drain the cooking water and set the noodles aside.

For the marinade, dissolve the instant soup in about 100 ml of hot water. Season the soup with mirin and soy sauce.

Wash the watercress and pat dry.

Peel and finely chop the garlic.

Cut the shrimp along the back and remove the intestines. Sprinkle with lime juice and season with teriyaki sauce. Fry very briefly in a pan with hot oil.

Mix the soba noodles with the marinade and season with sesame oil, lime juice. Serve the fried teriyaki shrimp on the lukewarm noodle salad.

This delicious soba noodle salad can also be served with roasted vegetables or grilled chicken pieces.
