Instructions:

Mix the flour with the baking powder, salt and sugar and sift into a large enough bowl. Separate the egg. Mix the egg yolks with the soy milk and melted butter, then add to the flour mixture form.

Stir all the ingredients together to form a smooth batter. Whip the egg whites until stiff and fold in gently.

Pour the batter in batches into a lightly greased waffle iron and bake. (As an alternative to the waffle iron, narrow pancakes can be baked from the batter in a frying pan). Sprinkle the waffles with powdered sugar, if desired, or offer compote with them.

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
