For the spaghetti alle cozze, rinse the mussels under cold running water, remove the beards and clean the mussels with a root brush. Remove open and damaged mussels.

Remove peel from celery and cut into 1/2 cm cubes. Blanch (scald) tomatoes, rinse, skin, quarter and seed. Finely dice garlic.

In a large shallow saucepan, sauté celery and garlic in hot oil for 2-3 minutes until soft. Extinguish with cognac. Add wine, tomatoes, bay leaf and thyme. Season with salt and pepper. Add mussels and cook with lid on for 10 minutes over medium heat.

In the meantime, cook the spaghetti in enough boiling salted water until al dente, drain, drain well and place in a warmed bowl. Pour the clam sauce over it, add the parsley and mix well. Serve the spaghetti alle cozze immediately.
