Instructions:

For the spelt apple pie, let the yeast rise in the milk with a little sugar (1-2 tbsp.). Whisk all other ingredients with the yeast milk and knead into a smooth dough. Dust with a little flour to stop it sticking and let rest for about an hour.

For the filling, peel and dice the apples and sprinkle with preserving sugar and mix with the remaining ingredients.

For the crumble, knead all the ingredients together in a bowl (it works best with your hands).

Roll out the risen yeast dough and place it on a baking sheet. If it is a very shallow baking sheet, put a metal or cardboard rim on it. Spread the filling on it, put the crumbles on top and let it rest again for 2o to 3o minutes. Then bake for 3o to 4o min. at 17o degrees on the middle rack.( Fan oven 150 to 16o degrees about 3o min.).

Let cool and cut the spelt-apple cake into pieces and decorate with whipped tops and dried apple rings.
