First, preheat the oven to 160 °C – 170 °C. Separate the eggs and beat the egg whites until firm.
Mix the yolks, butter and sugar until a foamy mass is formed (approx. 5 minutes).
Then add the milk, baking powder and spelt flour and mix. Then carefully fold in the snow.
Spread the mixture on a baking tray with baking paper. Place the apricots on top with the inside facing up. Bake the cake at 160°C – 170°C for 40-45 minutes.
To serve, dust the cake with sugar.
