Instructions:

For the spelt grissini, knead the ingredients for the dough into a smooth ball. Cover and let rest in a warm place for one hour. Roll out the dough on a floured work surface to about 1 cm thick and cut into strips about 15 cm long and finger-wide.

Twist into strands and place on a baking sheet lined with parchment paper. For the glaze, briefly boil water, olive oil and salt and whisk until creamy. Brush the grissini with it.

If desired, sprinkle the spelt grissini with dried herbs, chili, sesame seeds, etc. Bake at 210 degrees top/bottom heat for about 20 minutes, depending on the desired degree of browning.
