For the spelt lentil stew, wash spelt grains properly and soak in water overnight. Wash lentils and cook according to package directions until tender, about 45 minutes.

Sauté onions in oil. Add lentils and spelt grains, sauté for 1 min and pour salted water. Bring to a boil and reduce heat. Cook for half an hour until the spelt is soft and the water is absorbed. If necessary, add a little water in between.

Season the spelt-lentil stew with salt, pepper and a little balsamic vinegar.
