For the spelt pretzel, knead flour, yeast, sugar, salt and lukewarm water in a food processor with the dough hook until smooth.
Remove from the bowl and knead again. Cover and let rise in a warm place for about 30 minutes until doubled in volume.
In the meantime, prepare the baking soda: Mix baking soda with water and salt in a saucepan, bring everything to a boil and remove from heat, let cool slightly. Knead the dough again and divide it into about 25-30 pieces of the same size (pastry will be about the size of Jour pastry).
Roll each piece of dough into a long strand and shape into a pretzel. Place pretzels briefly in the warm baking soda water (about 30 seconds), remove, drain.
Place on a baking sheet lined with parchment paper. Sprinkle with sunflower and/or pumpkin seeds. Bake in preheated oven (180 °C hot air) for about 15-20 minutes. Remove, let cool and enjoy the spelt pretzel lukewarm.
