For the spelt sourdough bread, mix the sourdough, sugar, yeast and water until the yeast has dissolved. Add flour, salt and bread spice and knead with a food processor until the dough is smooth.
Let rise in a warm place until doubled in height, knead again. Shape into a bun with a little flour and place in a proofing basket.
Cover with a cloth and let rise to double height. Preheat oven to 220 °C, place water bowl on the bottom of the stove. Put bread dough on a coated tray and bake at 220 °C for 10 minutes.
Then bake for another 20 minutes at 200 °C. Leave to cool on a rack.
