For the spelt strudel with smoked tofu and spinach, sort the spinach. Peel and finely chop the garlic. Wash and chop the mint.

Wash and chop the onions. Fry in olive oil, add garlic and spinach. Cut smoked tofu into small cubes. Season with salt and pepper.

Roll out the dough and cover with the sautéed spinach. Spread the smoked tofu on top and grate the feta cheese on top. Spread the mint leaves and flavor with some grated organic lemon. Roll up the strudel and brush with a beaten egg.

Bake the spelt strudel with smoked tofu and spinach in a preheated oven at 220 °C for about 25 minutes.
