Cover a baking tray with baking paper.

Mix almonds, sugar and spices well and sift (see picture 2).

Beat egg whites until foamy and “peaks” (see picture 3).

Fold in the almond mixture and mix gently until smooth and homogeneous.

Fill the mixture into a piping bag (see picture 4) and pipe small, even circles of about 2 cm onto the baking sheet.

Sprinkle almonds and pistachios on the macarons before they dry (see picture 5).

Let the dough dry for 30 – 60 minutes until the surface is slightly dry.

Preheat oven to 180 °C convection oven.

Place the macarons in the oven. Lower the temperature to 150 °C. Bake for about 15 minutes until nicely browned.

Pull the baking parchment paper over the edge onto the table so that the macarons come off the paper easily.
