For the spinach and feta cheese egg, defrost the spinach and let the puff pastry thaw slightly. Peel the onion and chop it very finely. Saute the onion in the oil until translucent and mix into the thawed spinach leaves.

Crumble the feta into small pieces and mix with the spinach. Beat the egg. Roll out the puff pastry slightly and cut out 8 large eggs using a template.

Brush the edges of 4 eggs with egg and place the spinach-feta mixture on top. Pour the other egg over the top and press down firmly on the edge. Place the filled puff pastry eggs on a baking tray lined with baking parchment and brush with the remaining egg.

Bake in the oven at 180 °C for about 10-12 minutes until golden brown.
