For the spinach cake, beat the egg yolks with the sugar until foamy, add the almonds, lemon juice, curd cheese, spinach and cinnamon. Beat egg whites until firm and fold in. Carefully fold in breadcrumbs, pour into greased, floured pan and bake at 180°C for about 50 minutes.

Beat egg whites until firm, stir in sugar and beat again. Brush warm cake with snow and decorate with pastry card. Bake spinach pie at 150°C degrees and again for 15 minutes (leave oven ajar).
