Spinach Puff Pastry Cake

Rinse spinach quickly under running water. Sauté in a bowl with 20 g butter for 5 minutes. Peel and chop onions. Microwave 60 g butter for 1 minute 30. Preheat stove to 180 degrees (gas mark 6).

In a saucepan, sauté the onions in 20 g butter until translucent, add the spinach, whipped cream, pine nuts and raisins. Season with salt and pepper. Season with a hint of nutmeg. Mix carefully. Simmer for approx. 10 min. on low heat so that the liquid evaporates.

Using a brush, brush the puff pastry slices with melted butter. Butter the baking dish and place two puff pastry slices on top of each other on the bottom. Spread out a layer of vegetables.

Top with two puff pastry slices and continue until all ingredients are used. Top with butter flakes and bake in the oven at 180 °C (gas mark 6) for 10 min.

You can also sprinkle grated cheese over the puff pastry before putting it in the stove, if you wish. This tastes exceptionally good. You can also stop the preparation after you have prepared the spinach. Then do the rest just before serving.
