Mix flour, beaten eggs, sour cream, a pinch of salt, pepper and strained spinach to make a spaetzle dough. If necessary, stir in a little more water.

Bring enough salted water to boil, press the spaetzle directly into the boiling water with the help of a spaetzle slicer and cook until they rise to the surface. Strain the spaetzle, rinse in cold water and drain.

Cut the ham into small cubes, melt butter or clarified butter and gently fry in it, lift out and keep warm.

Stir some more butter into the pan and toss the spinach spaetzle briefly in it.

Arrange the spaetzle, spread the roasted ham cubes on top and garnish with freshly chopped herbs before serving.
