Spinach Tart without Base

Instructions:

Peel and finely dice the onion and garlic. Melt butter in a saucepan and sauté onion for 3 – 4 minutes. Add garlic and sauté for 1 minute. Add the spinach, unthawed, and bring to the boil with the lid on. Remove lid and simmer over low heat, stirring often, for about 2 minutes. Season to taste with salt, pepper and nutmeg. Remove bowl from heat and let spinach cool.

Preheat oven to 160 °C. Brush a tart pan with butter and sprinkle with breadcrumbs.

In a bowl, mix eggs with crème fraîche and cream cheese. Grate Parmesan cheese and stir in. Salt and pepper egg mixture and season heartily with paprika powder and chili flakes. Mix in cooled spinach.

Pour the mixture into the prepared mold and smooth the surface. Set oven to 140 °C convection oven and bake the tart on the middle rack for about 45 minutes.

Remove tart from oven, cut into pieces and serve immediately.
