Try this delicious cake recipe:

Spiky, as it should be for this cake, is the chocolate covered sponge cake. This is a little for a children’s party (or likewise for adults !).

For the dough, mix arrack, egg yolks, salt and sugar until nice and creamy (can take up to half an hour, but must be nice and creamy !). Whip egg whites to stiff peaks, slide onto the egg mixture. Sift flour over it and fold in.

Fill the dough into a greased hedgehog pan (or into other oval forms, from which you can cut the hedgehog later). Place in the oven heated to 180 °C and bake for 45 minutes. Cool down.

For the cream, cream the butter. Mix in egg yolks, powdered sugar and cocoa. Cut hedgehogs twice horizontally and fill with cream. Cover the hedgehog with almonds so that it looks spiky!

Melt the cooking chocolate in a water bath according to the instructions, pour the cooking chocolate over the hedgehog. Press one half of an almond on each hedgehog as an eye, stick half a cherry on each and press an entire almond on as a snout.

Keep hedgehog cooled until cutting.
