A simple but delicious cake recipe:

Preheat the oven to 190 degrees. For the sponge, beat the eggs, sugar and vanilla sugar with the water for 10 minutes until creamy. Mix flour and baking powder to the egg mixture form and fold in briefly by hand. Grease a baking tray, spread the sponge mixture on it and bake for about 15 minutes. Cool.

Drain the fruit from the can, collect the juice and use it elsewhere. Rinse, clean and dry the fresh fruit.

For the filling, whip the whipped cream until stiff and set aside to cool. Soak the gelatine. Stir the curd cheese with sugar and vanilla sugar until smooth. Mix the pudding powder with the milk according to the package instructions. Allow the gelatine to melt and cool slightly.

In the meantime, mix the curd and pudding and then fold in the gelatin. Leave to cool briefly. When the mixture begins to set, mix it with the whipped cream and spread this cream on the sponge cake base. Place the fruit on top.

Directions: Drive from Hoetmar town center in the direction of Everswinkel. Approx. 500 m after the town exit sign, turn right into “Dorfbauerschaft” and follow the signs.
