Instructions:

Cut salami into narrow strips. Rinse radishes, trim greens, rub dry, halve and finely slice. Thinly peel radish, kohlrabi and carrots, cut into fine sticks.

Roast pine nuts in a little rapeseed oil. Cut cress into small pieces. Clean and dry arugula. Cut bread slices in half. Cut oranges generously on top and bottom with a fillet knife, then cut peel with the white into small pieces with a kitchen knife. Cut out orange fillets.

Mix well radish slices, salami strips, vegetable sticks with pine nuts and orange fillets. Add cold pressed canola oil, balsamic vinegar and orange juice, mix lightly, season strongly with salt and freshly ground pepper.

Dressing:

Spread arugula evenly as a bed on flat plates, mound raw vegetables on top, sprinkle with cress and pink shrubberries and garnish with sprigs of thyme. Put on slices of bread.
