For the burnt sterz, lime the flour in a hot pan (toast without adding fat), it then takes on a light brown color.

Pour boiling water on the toasted flour (burn it off). Break up the mixture with two forks.

Now add the clarified butter to the burnt off sterz, roast well and add salt.
