For the stilt with sauerkraut, rinse the stilt and pat dry. Rub the cuts with salt and pepper. Sear in a glass baking dish with a lid at 850 watts for 8-9 minutes.

Then turn the stilt to the other side and cut the rind crosswise. Add pulled apart sauerkraut, bay spice and wine.

Cook closed at 850 watts for another 8-9 minutes and finish cooking at 440 watts in 30 minutes. Then let stand closed for 5-10 minutes and serve the stilt with sauerkraut.
