Soak gelatin according to package directions.
Mix sugar, buttermilk, strawberry puree, juice of one lemon and zest.
Dissolve gelatin in hot water bath.
Stir 1/4 of the mixture into the hot gelatin and then mix with all the buttermilk mixture.
Pour into small bowls brushed with a little oil and refrigerate.
After turning out, garnish with fresh strawberries as desired.
