Instructions:

(*) Lauter sugar is sugar boiled with the same mass of water until the two are combined into a thin syrup.

Stuffed pear in sleeping skirt: defrost Tk puff pastry. Remove the skin from the pears and fish out the core from below with a baller. Fill the cavity with marzipan. Roll out the puff pastry a little and cut into square pieces. Place each pear on a piece of puff pastry and press the corners together over the pear.

Mix egg yolks with a little bit of water and brush the puff pastry with it. Bake in a heated oven at 185 to 200 °C for about 18 minutes until golden brown.

Pear parfait and pear-vanilla sauce: * Peel and core the pears, cut them into cubes and make a compote with cinnamon and sugar. Remove the cinnamon stick, then finely grind the compote with a blender or in a hand mixer. Cool.

* Whisk egg yolks and remaining sugar in a stainless steel kettle or saucepan on a water bath until thick cream. Then place the saucepan in a large enough bowl with ice cubes and whisk until cooled. In this way, the parfait becomes exceptionally creamy.

* Whip the cream until as stiff as possible. Stir half of the cooled pear puree into the egg mixture, then carefully stir in the whipped cream. Fill everything into a loaf pan (baking dish) lined with cling film and place in the freezer or refrigerator.
