For sugar crystals, first prepare the molds: To do this, line about 12 cups with aluminum foil – make sure there are no holes in the foil!

Pour the sugar and water into a saucepan and bring to the boil while stirring. Let it boil until the sugar has completely dissolved and the syrup is completely clear. (Attention: The syrup can foam a lot).

Remove the pot from the heat and color the mixture with food coloring. The rule here is: more is more! The more color you use, the more colorful and sparkly the finished crystal will look.

Now fill the syrup about halfway into the prepared molds and cover them with another sheet of aluminum foil (this must not touch the syrup surface!). Place the molds on a tray, cover everything with a tea towel and put it in a quiet place where the crystals can grow in peace.

After 2 days you can check for the first time if smaller crystals have already formed. However, it takes at least (!) 1 week until these have grown to a decent size.

Once the sugar crystals have set, carefully lift the aluminum ramekins out of the cups and pour off any excess syrup. Place ramekins back in cups and let crystals air dry for about 1 day.

The next day, gently remove sugar crystals from aluminum ramekins, place on plates and allow to air dry for another day to properly harden.
