For the Swedish Christmas punch, first peel the ginger and cut into fine slices.

Cut the vanilla bean lengthwise and scrape out the pulp.

Wash the lemon well, dry it and peel it with a peeler. Then cut the peel into very fine sticks. Squeeze the lemons.

Coarsely pound the cardamom, allspice and cloves in a mortar, then add the ginger slices, vanilla pulp and pod.

Dissolve the sugar in a saucepan and add first the lemon juice and then the red wine.

Add the crushed spices, cinnamon and star anise and simmer for 20 minutes at a moderate temperature with the lid closed. Allow to infuse for at least 2 hours.

Then pour through a fine sieve into a saucepan. Add the raisins, almond slivers and lemon zest and simmer on low heat for 5 minutes.

Add the rum.

Stop boiling the Swedish Christmas Punch and serve immediately in heatproof glasses.
