Halve peeled hard-boiled eggs lengthwise, separate egg yolks from egg whites and strain through a sieve. Stir through mayo, ketchup, finely grated onion, a dash of Tabasco sauce, a dash of chili sauce and the juice of a lemon, season with chili, salt, mustard powder and paprika. Fill the egg halves with this mixture. Drink a nice cold beer with it.
