Instructions:

A great fish recipe to make yourself:

Rinse fish, dry well, cut into strips, drizzle with lime juice just before browning, then rub with curry, pepper and salt. Cut shallots with greens into thin slices. Dice papaya, cut pineapple into small pieces. Heat oil in a large frying pan, sear fish until hot. Meanwhile, sauté the shallots and pineapple in another frying pan. When the fish is golden brown, add the shallots, pineapple and papaya to the large frying pan. For the sauce, heat the pineapple juice, add the juice of 1 1/2 limes, the rose bell pepper, Tabasco, the nutmeg, pepper, and the cornstarch to thicken. When the sauce has boiled and thickened, pour over the fish pan, fold in, another minute on medium-hot plate. Next, bring to the table, preferably in a skillet.

It goes well with a curry rice, preferably basmati rice.
