In a baking bowl, mix well the flour, sugar, lemon zest. Crumble in the yeast. Soften the butter in the lukewarm milk, add the egg and mix. Add to the dry ingredients form and knead with the dough hook to a dough.

On the floured surface, knead heartily by hand for at least 10 min until the dough is no longer sticky and is nice and smooth. Place back in the floured baking bowl, cover with a dishcloth and rise in a warm place for 50 to 60 min until the dough has doubled in size. Grease a baking sheet. Knead the dough briefly on a floured surface and shape into a pretzel. Leave to rise for 10 minutes.

Preheat the stove to 190 °C. Brush the pretzel either with water or brush with melted butter and sprinkle with sliced almonds and hail sugar. (Alternatively, make a sugar glaze with powdered sugar, juice of one lemon and water). Bake gently on the middle rack for 15 to 20 min.
