Instructions:

Preheat oven to 180 °C top/bottom heat.

Clean the sweet potatoes and place them on a baking tray. Put them in the oven for about 45 minutes, until they are soft. Peel, let cool a bit and strain.

Mix with flour, yolks, salt and pepper to make a soft dough. Add a little more flour if needed.

Form into a thin roll on a floured work surface and cut off pieces of equal size. Shape into gnocchi and make the characteristic indentations with a fork.

Place the sweet potato gnocchi in boiling salted water and let steep at low tempertaur until they float to the top. If the pot is not so big, do the process in 2 portions if necessary.
