For the sweet potato pancakes with mango mustard cream, peel and coarsely grate the sweet potatoes and onion. Peel the garlic clove. Clean the spring onions and cut the white or light green into fine rings.

Peel the mango, cut it from the core and mash it. Add créme fraiche, garlic, mustard and spring onions. Season strongly with ginger, turmeric, new spice, cumin, cayenne pepper, salt and freshly ground pepper. Stir in the sweet potatoes, onion, egg yolks, new spice and cayenne pepper. Finally, add the flour. Season well with salt and pepper.

Heat oil in frying pan and add 1 tablespoon of the mixture at a time, spreading a little evenly, and toast over medium-high heat for about 5 minutes, turning once.

Drain on paper towels and serve the sweet potato pancakes with mango mustard cream.
