For the mulled wine syrup, put sugar in a large saucepan and pour red wine. Add cinnamon, allspice seeds, star anise and cloves and bring to the boil vigorously once together with the tea.

Then continue to simmer only on a low heat. After about half an hour, a not too thick syrup should have formed.

Remove the tea bags and pass the finished syrup through a sieve to remove the spices. Pour into pretty bottles and refrigerate.

To make the mulled wine sparkling wine, pour 3-4 tablespoons of syrup into a champagne glass, and top with sparkling wine.
