For the mandarin topping tartlets, whip the curd, whipping cream and sugar until smooth. Pour some of this cream into a piping bag fitted with a star-shaped nozzle. Spread the rest of the cream on the tartlets.

Drain the tangerines through a sieve. Drape the drained tangerine wedges over the curd cream and garnish the tangerine and curd tartlets with a dollop of the cream.
