For the tarragon rice with carrots, slice the carrots and sauté them a little in hot butter, add the rice and stir briefly, pour in water, add salt and seasoning and half of the tarragon chopped.

Bring to the boil, then cover. Let simmer for about 20 minutes on lowest heat. Finely chop second half of tarragon and mix in before serving. Serve sprinkled with Parmesan cheese.
