Tavuk Gögsü is a famous dessert from Istanbul. In Turkey, you would buy such a dish at a muhallebici – a store for dairy dishes, because hardly anyone would cook it at home. It’s a delicious creamy dessert that doesn’t taste like chicken at all.

The chicken breast has to be cut into fiber-thin strips, which is very time-consuming. In Turkey, they say the breast must come from a freshly slaughtered chicken.

Place the chicken breast in a saucepan, pour on enough water to just cover it, and simmer over low heat until the meat is tender. Place the chicken breasts in a suitable bowl of cold water. Drain, pat dry, then cut lengthwise into strips. Holding the ends of the strips, grate until the meat fibers separate. Continue to grate toward the center, dividing the meat into fine fibers. Place in cold water and set aside.

Gently heat the milk and once it boils, pour in the ground Sübye or long grain rice, if desired. Simmer gently for 15 minutes, stirring continuously. Add the sugar and continue to stir gently for another 10 minutes. Then add chicken breast and lightly stir for another 10 minutes.

Heat a heavy pan and pour in Tavuk Gögsü.

Gently toast the underside, shaking the frying pan. When the dish has cooled, cut into rectangles and bring to the table.
