For the Tofu Bolognese, put the tofu in a bowl and crush into crumbs with your fingers. Heat the olive oil in a pan and fry the tofu crumbs in it until hot. Most of the water should evaporate and the crumbs should also take on some color.

Meanwhile, chop the onion and garlic. Reduce heat, add onion and garlic to tofu and sauté until translucent. Sauté tomato paste briefly and pour in strained tomatoes.

Add maple syrup, dried herbs, chili, salt and pepper and simmer for 4-5 minutes to desired consistency.

Mix Tofu Bolognese with spaghetti or other pasta and serve sprinkled with the chopped basil.
