For the Tofu Vegetable Parmesan Towers, cut the tofu into slices about 1cm thick. Cut the washed zucchini into slices also 1 cm thick.

Also cut the tomatoes and the onion into thin slices. Drizzle some olive oil in a small baking dish and place the tofu in it next to each other.

Place the zucchini slices on top of the tofu and the tomato slices on top of them. Salt all the turrets and sprinkle with garlic powder.

Finally, place the onion slices on top of the tomato slices. Sprinkle the turrets with Parmesan cheese. Bake at 200 degrees for about 20 minutes.
