Instructions:

For the tomato and onion lecho, add 2 teaspoons of chia seeds to the water and mix firmly. Add the pepper and let it swell for about 15 minutes.

Meanwhile, roughly dice the onion and tomatoes. Heat the olive oil in a pan and sauté the onion until translucent. Reduce heat and add diced tomatoes.

Stir immediately and simmer slowly. After about five minutes, add the swollen chia seeds. Bring to a boil and season again with salt and pepper.

Finally, add fresh chopped parsley and stir.
