Instructions:

Wash the tomatoes, score them crosswise on the bottom and put them in a bowl.

Pour boiling or hot water over them. After about 10 minutes, carefully peel the skin off the tomatoes.

Chop the skinned tomatoes into small pieces. Finely dice the onions and garlic cloves. Sauté both in a little olive oil and after about 3 minutes add the diced tomatoes.

After a few minutes, add vegetable soup. Add salt, pepper and dried thyme. Simmer gently on low temperature for about 20 minutes.

Finely puree the soup with a blender, then add tomato paste. Stir well and season to taste.

Pour the finished tomato soup into small bowls.
