Instructions:

For the tomato pasta salad, hard boil the eggs for about 10 minutes and quench. Peel the eggs, cut them in half, remove the yolk and set aside. Chop the egg white.

Cook the macaroni al dente in salted water according to package directions. Rinse with cold water and mix in a little olive oil to keep the pasta from sticking together.

Cut salami into small cubes. Wash the spring onions and cut them into small rolls. Carefully wash the lettuce and remove the leaves from the stalk.

Remove stalk and seeds from tomatoes and cut into bite-sized pieces.

For the marinade, mix Parmesan cheese, boiled egg yolks, mustard, vinegar and sour cream with a fork or a mixer to make a creamy marinade. Season with salt and pepper.

Now mix the cooked pasta with the salami, the chopped egg whites, the spring onions and tomato fillets and marinate with the dressing. Season with salt and pepper if necessary.

To serve, place the lettuce leaves on a flat plate,place the tomato pasta salad on top and garnish with radish sprouts or cress.
