Tortillas with Beef

Peel the avocado, remove the pit and cut the flesh into small cubes. Rinse tomatoes, halve, remove seeds and cut into cubes. Peel and finely chop garlic. Peel and chop one onion. Mix garlic, tomatoes, avocado, onion and parsley. Season with Tabasco, pepper, salt, lime juice and 1 tbsp. oil. Steep for 10 minutes.

Rinse meat, dry and cut into strips. Roast in a cast iron frying pan without adding fat for 2-3 min. on both sides. Season with salt, pepper and drizzle with 2 tbsp oil. Wrap in aluminum foil and rest in stove at 80 degrees for a few min.

Peel remaining onions, halve and cut into wide wedges. Roast in 2 tbsp oil until golden brown, season with salt and season with pepper. Warm wheat tortillas a little according to instructions. Cover tortillas with onion slices, meat strips and salsa and roll up.
