Instructions:

First, prepare the turkey breast. It should be taken out of the refrigerator in time to assume room temperature.

Wash the meat, pat the breast dry. Remove skin and subcutaneous fat, brush with soy sauce and let stand for 30 minutes.

Preheat oven to 100 °C top/bottom heat.

Meanwhile, clean, wash and finely slice carrot and leek. Peel onion, cut into fine cubes.

In a baking dish, melt 1 tablespoon of butter in the oven.

First add the onions and let them cook for 5 minutes. Then spread the vegetables on top.

Mix 1 tablespoon of very soft butter with honey, soy sauce, salt and pepper, rub the breast with it. Place the breast on the bed of vegetables and pour the soup over it. Cook in the oven at 120 °C for about 1 hour.

Wash the tomatoes, cut them into slices, clean the onion leeks, wash them and cut them into rings. Season with salt and pepper, add 1 pinch of sugar, drizzle with oil and balsamic vinegar in a shallow dish.

Remove the turkey breast from the oven and cut into slices, which in turn cut into strips and arrange on the tomato salad. Top with some of the soup.

Serve with bread and hard-boiled egg.
