1. meat cut into narrow strips. Remove the skin from the onion and cut into cubes. Remove the skin from the garlic clove and press it through a press. Blanch tomatoes, peel and cut into eighths. Clean and rinse arugula, spin dry and cut maybe once.
In a large frying pan (or wok), roast the turkey in the hot oil. Add onion and garlic, sauté about 2 min until soft, season with salt and pepper.
Add pine nuts and 2/3 of the arugula and sauté briefly, turning. Chop the remaining arugula and add before serving.
