Turkey Medallions with Broccoli

Clean broccoli, rinse and cut into roses. Heat a little salted water and steam the broccoli in it for about 5 minutes with the lid closed. Cook the croquettes in the heated oven (electric stove: 225° Celsius /

gas stove: level

Meanwhile, rinse turkey and dry with kitchen paper.

Cut into 12 medallions. Wrap each medallion with a slice of bacon and season with salt and pepper. Heat the oil in a frying pan and fry the meat on both sides for about 5 minutes.

Clean the chanterelles and mushrooms, rinse them and cut them into small pieces according to their size. Remove the skin from the onion and chop into sticks. Drain broccoli and let it drain in a sieve. Remove the medallions from the frying pan and place them briefly in the oven to keep warm.

Fry the onion and the mushrooms in the frying fat for about 5 minutes. Add the broccoli and heat. Add whipped cream and simmer for about 5 minutes. Add the sauce thickener and bring everything to the boil again. Season with salt and pepper.

Serve 3 medallions each with broccoli and mushroom greens and croquettes on plates. Sprinkle with coarse pepper and place on the table.
