For the Tyrolean Asparagus and Potato Salad, wash potatoes thoroughly and boil in water with salt for about 30 minutes. Meanwhile, finely weigh the mint and roast the cumin in a pan without fat and then set aside.

Clean the asparagus and peel the lower third. Cut off ends. Drain potato and cut in half. Cut asparagus into pieces about 3 cm long and cook in boiling salted water for 5 minutes. Then remove and drain.

Cut HANDL TYROL Tyrolean Mountain Ham into thin slices, lightly roast in a pan and set aside. Marinate asparagus and potatoes with cumin, some lemon juice, mint and olive oil. Peel garlic, chop finely and add.

Season with remaining lemon juice, salt and pepper, place roasted HANDL TYROL Tyrolean Mountain Ham on top and serve the Tyrolean Asparagus and Potato Salad.
