For the Tyrolean dumplings, heat the milk and pour over the dumpling bread. Add the 2 eggs, mix everything together well and let it sit for a good 30 minutes.

In the meantime, dice the bacon, chop the onion and garlic and fry well – season with salt, cayenne pepper and grated nutmeg and let cool.

Wash and chop fresh parsley. Preheat the oven to 175 degrees and prepare a coated roaster. If you don’t have a coated one, then brush the bottom with a little oil.

Add the bacon mixture to the dumpling bread and mix well, add the parsley, mix well and add enough flour so that the mixture is not too wet.

Wet your hands, form dumplings from the mixture and put them in the roaster. Put the lid on it and bake in the oven for 30 minutes. After the baking time, cover the bottom of the pan with a little water and continue cooking in the oven for another 20 minutes.
